5 steps to Perfect Pancakes with Give as you Live

Yay for Pancake Day! I love Pancake Day. I’ll never forget when I came in from school and laid upon the kitchen sides was what I can only describe as heaven; plates of blueberries and strawberries, an array of butterscotch, chocolate and strawberry sauce, bowls of sweets, a pot of sugar and a fresh lemon. I looked at my Mum and there she was in an apron, flipping pancakes.

I thought I’d share with you a recipe for perfect pancakes and some equipment you may need- shop through Give as you Live and raise money for your charity when you flip pancakes next Tuesday!

Ingredients:

  • 110g plain flour, sifted
  • pinch of salt
  • 2 eggs
  • 200ml/ milk mixed with 75ml oz water
  • 50g/2oz butter

Method
1. Sift the flour and salt into a large mixing bowl. Make a well in the centre of the flour and break the eggs into it. Then whisk together.

2. Next gradually add small amounts of the milk and water mixture, still whisking, it should look like the thin cream when it’s ready.

3. Melt the 50g of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then use the rest to smear on the pan each time you make a pancake.

4. Get the pan really hot, then turn the heat down to medium and put 2tbl spoons of batter in the pan. As soon as the batter hits pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it’s tinged gold as it should be.

5. Flip the pancake over with a pan slice or palette knife – the other side will need a few seconds only – then simply slide it out of the pan onto a plate.

Then add whatever topping you like, personally I like melted chocolate and bananas, but you can go crazy with choices, strawberries and cream, plain sugar and lemon, strawberry sauce and zazzles…the list is endless.
